Baked Tilapia - Meditteranean Style

One of the dishes that I make for my family - involves Tilapia. I make it once a week - and change it up a bit. No matter how I make it - everyone loves it - including my 4 year old niece.

You can get it at Sams in the big bulk in the freezer section out in the middle. This is where they have all their fresh seafood. They are on a black platter with clear plastic wrapped around it. Tilapia filets.

I also buy the Tilapia in the freezer section toward the back of Sams - that are individually wrapped. Either one works beautifully.

Line a deep, long baking pan or dish with foil.
In a bowl - measure out a cup of cold-pressed Olive Oil.
Mix in the seasonings that you want, stir, and then pour into the bottom of the pan.
**Make sure the bottom is evenly coated.
Cut up a white/red/yellow onion (your choice) and layer the
bottom of the dish.

Measure out some Olive Oil in a big bowl and mix seasonings into this.
Dip your Tilapia in the oil and then lay it on top of the onions.
Sprinkle with Lemon Pepper.
Sprinkle with any flavor type Feta cheese.
Layer with onions and garlic.
Sprinkle parsley over this and some cilantro (optional)
Cover top with foil.
Bake at 350* until done.

Gives off a wonderful aroma and awesomely delicious.
